How to Make Bacon Wrapped Chicken Bites with 4 Simple Ingredients

Ingredients

This chicken appetizer recipe makes 21 pieces and guests usually eat 3-4 pieces.

• 3 Chicken Breasts
• 7 Strips of Bacon
• 1/2 Cup Mayonnaise (I prefer to make my own, or you can use Hellmann’s.)
• 1/2 Onion- finely chopped

When initially preparing to make these bacon-wrapped chicken tenders, we anticipated more guests than attended. So, I cut my original recipe in half. If you’re wondering about the surplus in the pictures, that’s the reason. 😉

How to Make Bacon Wrapped Chicken

Preheat oven, or toaster oven, to 375° and bake for about 45 minutes, total.

Finely dice 1/2 of a yellow onion and place in a bowl. Make your favorite homemade mayonnaise, or use Hellman’s and add to the onions. Cut the raw chicken breasts into small bite-size pieces, about 2″ wide. Add the chicken chunks to the onion and mayonnaise bowl and mix well. Cut seven strips of bacon into three equal quarters/sections. Firmly wrap each cut bacon strip around each of the chicken chunks. You do not need toothpicks to hold them in place.

Place on a wire cookie sheet or tray to allow the bacon grease to drain, then bake in the oven or toaster oven for about 30 minutes. I prefer using a toaster oven for smaller crowds.

Remove from the oven and gently turn each bacon wrapped chicken piece over, allowing the underside to get toasty. Place back in the oven for another 10-15 minutes or until the bacon is golden brown. Enjoy with your favorite dipping sauce and bon appétit! 😋
