Preheat your oven to 400°F. Begin by draining two boxes of thawed spinach, preferably using a fine mesh strainer or cheesecloth to extract excess moisture, thoroughly. It’s crucial to prevent sogginess in your pastries. Take the extra step to press the spinach one more time after you think you’re finished.
Next, sauté finely diced onions until translucent and set aside in a mixing bowl. Combine the onions with an egg, garlic, mozzarella, feta, and Parmesan cheese, along with salt and pepper. Mix the ingredients well to create a flavorful filling.
Prepare two puff pastry sheets by unfolding them and lightly rolling with a dusting of flour to aid in the rolling process. Evenly spread the spinach mixture over the pastry sheets, then roll them lengthwise and secure the ends with a few pinches.

1 Small Onion, Diced
2, 10 Ounce Packages Frozen Spinach, Thawed and Strained
1 Cup Feta Cheese
1 Cup Shredded Mozzarella
1/4 Cup Powdered Parmesan Cheese
3 Garlic Cloves, Crushed
2 Eggs- 1 Egg in Filling; 1 Egg Yolk Brushed on Top with 1 Teaspoon of Milk (mixed together)
1 Package Thawed Puff Pastry, 2 Sheets
Salt and Pepper, Generous Pinch
Directions
- Preheat oven to 400°F.
- Strain the 2 boxes of thawed spinach with a mesh colander or cheese cloth.
- Unfold the puff pastry sheets and set aside. Roll out lightly with a flour-dusted rolling pin to make more pliable when rolling.
- Sautee diced onions until softened.
- Place softened onion in a bowl along with 1 egg, mozzarella, feta, and parmesan cheese, garlic, salt and pepper. Mix well.
- Divide the spinach mixture in half and spread on each puff pastry sheet. Cover completely.
- Roll up each puff pastry sheet lengthwise and pinch the ends to secure the dough. Then, cut the rolled pastry into 10 equal slices.
- Transfer the spirals to lined cookie sheets and brush the egg yolk/cream wash on top, taking care not to disturb the filling in the middle while spreading.
- Place the spirals in a 400°F oven on the bottom rack and bake for 15-20 minutes, or until the pastry is puffed up, golden brown, and cooked through in the center.

- If you don’t have time to thaw the spinach to room temperature, you can place it in a small pot along with 1/2 cup of water and heat it up to thaw. Then, strain it well to remove as much liquid as possible.
- To serve a smaller crowd, you can halve the recipe and bake 10 cheesy spinach pinwheels using only one pastry sheet from the package. Wrap the remaining pastry sheet tightly and return it to the freezer for future use.
Can Spinach Pinwheels be Prepared Ahead of Time
Absolutely! Cheesy spinach pinwheels can indeed be made ahead of time. Simply wrap them tightly in the rolled-up form (before slicing) with plastic wrap. You can prepare the spirals a day or two ahead of time, making your baking on the serving day quick and easy.
