Holiday Biscotti Ingredients
This recipe makes about 6 cookies. We suggest doubling the recipe.
- 1 Cup Flour
- 1/3 Cup Sugar
- 1/2 Teaspoon Baking Powder
- 1/8 Teaspoon Salt
- I Egg
- 1 Teaspoon Vanilla
- Zest from 1 Lemon
- 1/2 Cup Crushed Pistachios (save more for garnish)
- 1/2 Package or 8 Ounces White Chocolate, Melted
Pistachio and Chocolate Biscotti Instructions
Preheat oven to 350° and bake for 30 minutes.
In a large bowl, combine the egg, vanilla, flour, sugar, baking powder, salt, lemon zest, and pistachios. Blend well with a spoon initially, and then use your hands. You’ll need to “knead” the ingredients until they start to stick together and form a ball. Resist the urge to add water. Biscotti is meant to have a dried, cracker-like texture. However, if absolutely necessary, add only 1 teaspoon of water to the pistachio biscotti dough if you need a little extra ‘glue.’ Otherwise, it will eventually stick together.
Shape the dough with your hands into a log as shown in the pictures. Bake at 350°F for 30 minutes on a parchment-lined cookie sheet. Remove and allow it to cool for 10-15 minutes. Make sure it’s partially cooled before cutting to prevent it from cracking as you slice.
Use a sharp serrated bread knife and slowly slice 2-inch wedges at an angle to create the slanted biscotti cookie appearance. Then, place them on a lined cookie sheet once more and return to the oven for 5 minutes.
Remove from the oven, flip the holiday biscotti cookies over one more time, and place them back in the oven for an additional 5 minutes. This gives biscotti its name, meaning, “twice baked.”
Allow the cookies to cool for 10-15 minutes before drizzling on the melted white chocolate and crushed pistachios as beautiful Christmas-like embellishments. Place the pistachio white chocolate biscotti cookies back onto the parchment-lined cookie sheet and refrigerate them until the chocolate firms up. Then, serve and enjoy. 🤍
