Bundt Coffee Cake Ingredients
- 2 Sticks Unsalted Butter- Softened
- 2 Cups Sugar
- 3 Cups Flour
- 1 Cup Buttermilk
- 4 Eggs
- 2 Tablespoons Vanilla
- 1/2 Teaspoon Lemon Juice
- 1 Tablespoon White Vinegar
- 1/4 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- Powered Sugar- (to sprinkle on top of the cake after it’s baked)
Cinnamon Streusel Ingredients
- 1 Stick Unsalted Butter- Softened
- 3 Tablespoons Cinnamon
- 1/2 Cup Sugar
- 1/4 Cup Flour
Cinnamon Streusel Instructions
Soften the butter and place it in a mixing bowl. Add the cinnamon, sugar, and flour to the butter and mix with a hand blender or Kitchen Aid until crumbly. Divide the mixture in half. Sprinkle one-half of the cinnamon streusel in the middle of the cake batter and the other on top.
Bundt Coffee Cake Instructions
Preheat oven to 325ยฐ and bake for 40-55 minutes.
Soften the butter and place it in a mixing bowl. Add sugar and mix with the butter using a hand blender until the ingredients are incorporated and it has a creamy consistency. Add eggs and mix again. Add flour, buttermilk, lemon juice, vinegar, vanilla, baking soda, and baking powder and mix.
Tip– Add a dusting of flour on top of the cooking spray so the batter does not stick. My first cake stuck to the top of the Bundt pan because I did not add the dusting of flour.
Pour half of the batter into the Bundt pan. Sprinkle in half of the cinnamon streusel crumbles. Add the remaining batter to the top of the cinnamon streusel, and then the rest of the streusel crumbles on the top. Bake for 40-55 minutes until your Bundt coffee cake is golden brown or until a toothpick poke comes out clean.
