Gourmet Bruschetta Recipe- Ingredients

- 1 Baguette, Sliced into 1/2-Inch Thick Pieces
- 4 Ounce Package Herb Goat Cheese (or plain goat cheese)
- 10 Ounce Container Multi-Colored Cherry Tomatoes
- .5 Ounce Package Fresh Basil Leaves, Chopped (more for garnish)
- 1-3 Garlic Cloves (left whole for toast topper)
- 2 Cloves Garlic, Minced
- 1/3 Red Onion
- Extra-Virgin Olive Oil
- Balsamic Vinegar
- Salt
- Pepper
- Extra Basil Leaves (garnish)
Balsamic Sauce Ingredients
- 1/4 Cup Honey
- 3 Tablespoons Balsamic Vinegar
Bruschetta Instructions
1. Prepare the Tomato Basil Mixture
- Begin by dicing the ripe cherry tomatoes, red onion, and basil leaves.
- Place tomatoes, onion, and basil in mixing bowl.
- Crush garlic cloves and add to tomato mixture.
- Drizzle in the extra-virgin olive oil and balsamic vinegar (to your liking) for a burst of flavor.
- Season the mixture with salt and freshly ground black pepper according to your taste.
- Mix everything together and let it marinate for about 20-30 minutes. For optimal results, marinate for 3 or more hours. This will allow the flavors to blend and intensify.
2. Toast the Baguette
- While the tomato mixture is marinating, preheat your oven to 350°F.
- Slice baguette on an angle for a slightly larger surface. Plus, it just makes them look a little more fancy. 😉
- Arrange the baguette slices on a baking sheet.
- Drizzle a little olive oil over each slice and toast them in the oven for about 5 minutes, or until they are slightly golden around the edges. We prefer them not to get too crispy. It’s easier to eat with a slightly crispy crunch than a cracker-like crisp. (Say that three times fast 😆) And less messy, too.
3. Assemble the Bruschetta
- Once the bread is toasted, remove it from the oven.
- On each hot toasted bread slice, rub a peeled garlic clove over the surface so the pieces become infused with the oil from the clove. This may take a few garlic wedges to cover all of the bread slices.
- For a special gourmet twist, spread a small amount of herbed goat cheese on top of each baguette slice.

How to Make Bruschetta Sauce
- Pour honey and balsamic vinegar into a small pot. Wisk consistently while waiting for the sauce to come to a boil. Reduce heat and simmer for a few minutes until the honey and balsamic reduce and become a slightly thick syrup-like sauce.
- Allow to cool slightly, about 5 minutes. It can become extra thick and hard to pour if left to cool for too long.
4. Pour On the Sauce
- For an extra gourmet touch, drizzle the balsamic reduction over each of the bruschetta toasts. It adds a sweet and tangy depth of flavor.
