I’m so happy you stopped by for the recipe. This is one of those casserole gems that my mother-in-LOVE passed along when my husband and I first married. WAY back when I did NOT know how to cook! LOL! I quickly figured out that since her son loved her cooking so much, why not ask for her recipes and duplicate them, so Dave’s heart, and belly, will be happy? Guess what? It worked! It’s been a while since then, but by doing so, I really learned how to cook. He was so grateful! 😜

Chicken Pot Pie Filling Only
If you are trying to go low-carb with your diet, feel free to eliminate the pie crust in this recipe. Just omit the “baking in the oven part” and dish out the goodness straight from the pan. Then you will have yourself a slightly more healthy chicken pot pie dinner.
The funny story behind this pie in the photos is that when I made it, we had to scoot out to a meeting right after pulling it out of the oven. By the time we got back home, our girls helped themselves to dinner and decided to eat ALL of the pie crust, too. 😆 Even the kiddos approve of this dish! I can honestly say, it was SO good even without the crust!
Chicken Pot Pie Recipe with Biscuits
This recipe is easily modifiable to suit your fancy. If you don’t have time to make the pie dough crust, and you want a type of “crust,” you can easily use Grands Flaky Layers Biscuits on top of your chicken pot pie filling. Feel free to peel apart the biscuit layers to create a larger crust-like topping. Bake as directed on the back of the package, and maybe a little less in light of the filling already being hot and starting to cook the bottom of the biscuits. Just keep an eye on it to make sure they don’t burn.
