It’s Sunday morning and you are about to rush out the door on an empty stomach, but then you breathe a sigh of relief when you remember you made the quick breakfast casserole the night before. So, all you have to do when you get home is reheat it. Phew! It certainly makes life easier when planning ahead.

Now, this piece of deliciousness will taste amazing ANY time you decide to serve it. You can make and bake the night before, or you can enjoy it piping hot, right out of the oven. Either way, it’s super quick and easy to prepare, and the best breakfast casserole recipe, in my family’s humble opinion. They ask me to make it just about every Sunday morning.
When I refer to this recipe as being “quick,” I’m referring to it as being a speedy coming-together of the ingredients. And, super easy! The actual baking in the oven takes about an hour.
Modifications for Food Sensitivities
Have fun with the options and modify as you and your family see fit. It’s so nice to have recipes that can be easily changed for those with food sensitivities. I can so relate as we have had our fair share of needing modifications.
My daughter used to have a sensitivity to dairy, and even though she has recovered from the issue, she will still not eat melted cheese, to this day. This is why I only sprinkled shredded cheese on one section of the casserole.
When it comes to the milk, we prefer to use oat or almond, rather than cow, which tastes equally amazing. It’s an Abby and Momma preference. Hehe!
You can add ingredients such as more vegetables, modify the “milk” options, and even the potatoes, too. Feel free to change the starch and make it into a tater tot breakfast casserole.
If you need this recipe to be gluten-free, just make sure the hash browns and sausage brands have no added wheat. Keep this in mind and you have a delicious gluten-free quick breakfast casserole.
Easy Breakfast Casserole for Special Events
There are so many special occasions for which you can prepare this quick breakfast casserole. From brunches to baby showers, and Sunday mornings, to special sleepovers, be inspired to make this oh-so-good dish, whenever you have a gathering that requires a whole lot of goodness that needs to be shared.
Breakfast Casserole Ingredients
9 Eggs
1 Pound Pork Sausage
1/2 White or Yellow Onion – Diced
1 Garlic Clove- Crushed
1 28oz Bag Frozen Hash Browns with Onions and Peppers- Thawed
Shredded Cheddar Cheese (Or any shredded cheese you prefer)
1 1/2 Cups Almond Milk, Whole Milk, or Heavy Cream
1/4 teaspoon Garlic Powder
2 teaspoons Sea Salt
1 teaspoon Black Pepper
Breakfast Casserole Instructions
Preheat Oven to 350°, 1 Hour Baking Time
Sautee onions and crushed garlic while browning the pork sausage, all together. Spray a 13×9 pan and layer in thawed bag of hash browns with onions and peppers. Sprinkle hash browns with extra salt and pepper for added flavor.
Add the pork sausage, onions, and crushed garlic to the top of the hash browns, evenly. Mix in a large bowl, 9 eggs, milk, garlic powder, salt, and pepper. Pour evenly over the hash browns and sausage layers.
Sprinkle cheese over top, however much you prefer. Or, you can leave the cheese out and make this recipe, dairy free.
Spray tin foil with cooking spray before covering the casserole dish.
Place covered casserole dish in oven at 350° for 45 minutes. Remove foil and bake for another 15 minutes.
*Put the casserole dish on the bottom oven rack to prevent the cheese from getting too crispy.
*Feel free to add more vegetables to the casserole, if you prefer. Zucchini and spinach work very well in this recipe.

As you navigate today, and the thoughts of delay come flooding into your head, I want to encourage you to intentionally shift your thought process. Start thanking God for what you DO have and for what you see that IS changing.
Doing this will lessen the load of feeling overwhelmed by delayed timing. Thankfulness produces action. “ACTion” can be in many forms. One of those forms being an ACT of changing your mindset.
