My daughter, Abby, asked me to make lemon chicken, so to make her smile, I felt compelled to deliver a yummy lemon slow cooker chicken breast dinner. Plus, this recipe is flat-out DELICIOUS and I was excited to indulge! Consider it one of those meals you can make any time of year. The cooking method will not heat the house in the summertime 🎉, and the gravy drippings can be poured over buttery mashed potatoes to make it a cozy fall/winter dish. Am I making you hungry? LOL! Lemon Chicken Ingredients
- 6 Boneless Chicken Breasts
- 1/2 Onion- Finely Chopped (I prefer to use a food processor so the onion pieces are super small)
- Italian Seasoning as Desired
- Salt as Desired
- Pepper as Desired
- 2 Tablespoons Avocado Oil (or another healthy oil)
- 2 Tablespoons Butter (I prefer to use Kerrygold)
- 3 Cloves Crushed Garlic
- 2 Lemons- Zested and Juiced
- GRAVY INGREDIENTS:
- 1 Tablespoon Chicken Bouillon Seasoning (I like to use the Knorr brand or Better than Bouillon)
- 1 Cup Oat Milk (can also use whole milk or half and half)
- 1 Tablespoon Arrowroot Powder (more if you prefer a thicker gravy)
Instructions
Cook on HIGH for about 2 hours or on LOW for about 4.
Season well with salt, pepper, and Italian seasoning on both sides of the chicken breasts, Then pan sear the chicken until there is a golden-brown coating on each side. This will make it look prettier when it comes out of the crock pot. 😋 Seer for about 4-5 minutes per side. Pour the oil, cut-up butter , and onion into the crockpot. Place chicken breasts on top and add lemon juice, lemon zest, and garlic.
Once there is about one hour left to cook, mix the chicken bouillon seasoning, oat milk, and arrowroot powder ingredients and pour over the chicken breasts. Let the meat soak up the liquid and simmer in the crock pot for 45 minutes to an hour. The chicken will be so tender and moist when you cut it up. Serve with your favorite veggies and rice or mashed potatoes. Bon appetit!
