The aroma of hot and fresh pancakes cooking makes everyone in the house very in tune with their hungry bellies and the fact that breakfast is about to be served. Why not take the traditional pancake experience and combine it with a little bit of science? Or a science experiment, I should say. Feel free to try this French crepe casserole recipe and watch as its height surpasses the casserole dish and become such a wow factor for your kiddos or guests as you pull it out of the oven. The Ohhs and Ahhs, naturally come with this yummy experience every time you decide to make it. The wow factor it gives off is SUPER fun!

Crepe Casserole Ingredients
- 1 Cup Flour
- 1 Cup Milk
- 4 Eggs
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Ground Flax Seed
- Cinnamon
- ½ Stick of Butter Melted on the Bottom of the Casserole Dish (Refer to Instructions for details.)
Instructions
Preheat the oven to 425° and place the casserole dish with ½ stick of butter, inside the oven, while it’s heating up. Keep an eye on the butter and remove it from the oven once it’s melted.
While waiting for the butter to melt, in a large bowl, combine the flour, milk, eggs, vanilla, and ground flax seed and mix with an immersion or hand blender.
Pour the yummy breakfast batter into the casserole dish with the melted butter. Incorporate the butter with the batter by swirling the ingredients with a spoon, knife, or spatula. You want to make sure the butter is spread throughout the breakfast crepe as it bakes.
Sprinkle the top of the French pancake with a generous amount of cinnamon. The color contrast this adds, in addition to the flavor, is just lovely.
Place in the oven, uncovered, for 15-20 minutes. This super fun crepe casserole will blow up higher than the baking dish. It’s a crowd-pleaser as you pull out of the oven. Add your favorite maple syrup, reduced berry puree, and/or whipped cream, and bon appetit!
Tip- This is a savory crepe casserole recipe. My girls love to add maple syrup to layer on the sweetness. You can also sprinkle white sugar over the top before putting it in the oven or dust it with powdered sugar after it’s baked.
